Simple Hearty Lentil and Herb Soup

This is one of my go to favourites, and as a one pot meals is super simple, wholesome and easy to digest. What more do you need on a rainy Sunday? It is adapted from an Anjum Anand recipe and has never failed to please friends and family over the last 10yrs.
