Detoxifying Mung Bean Soup

About the Recipe

Days when feeling sluggish, bloated, body aches, lethargic, tired and simply not great - this gives your digestive system a break.

Ingredients

  • 100g mung beans

  • 1l fresh water

  • 1/2 tsp turmeric, 1/4 tsp garam masala

  • 1-2 tsp ghee

  • 1/4 tsp asafoetida

  • 1tsp cumin seeds, 1 tsp ground coriander

  • 1tsp chopped fresh ginger or ground ginger

  • Squeeze of fresh lime juice (optional)

  • Optional: Sauteed or steamed bitter green leafy veg

Preparation

How To


Wash mung beans and soak overnight (min 8hrs)

Heat ghee and add drained mung dhal, saute until slightly brown and a little aromatic.

Boil with the water and gently simmer adding the turmeric, until soft (30-40mins) or longer.

Add more water if required. In a separate small frying pan, heat the ghee and sizzle the asafoetida for 5secs then add cumin, and ginger and cook for 30secs. Add coriander powder garam masala and simmer for another 20secs. Mix into the beans and cook for a few more mins. Add rock salt to taste with chopped coriander leaves and a good squeeze of lime. (Optonal). Add veg if you like.
