About the Recipe
Goes perfectly with the braised chicken, also great with the sweet potato korma
2 green cardamon pods
1 bay leaf
1/2 tsp of turmeric
Bit of oil.
Optional: sultanas and flaked almonds
Wash Basmati Rice and drain until clear. (Use 1 portion of rice to 1.5 portions of boiling water). Place in a large pain of boiling water. Add in green cardamon pods, cloves, a bay leaf, turmeric and a bit of oil. Bring back to boil, stir and put on the lid, simmering on medium heat for 10-12 minutes. Then remove from the heat, stir and leave the lid on, near the heat. If you like you can mix in a few sultanas for sweetness and a few flaked almonds sprinkled on top for decoration - my Mum always did!
