This week's recipes are for days when you are feeling sluggish, congested, have indulged a little too much or simply feel like you need to reset and revitalise. I had Covid a few week's ago and thankfully recovered quickly, however I have a lingering chesty cough so have decided to take a few days to reset and detox. Detoxification is an important aspect of Ayurveda and is taken very seriously and green mung beans are the bean most easily digested by all types. This Green Mung Bean Soup is excellent for removing toxins and balancing your digestive fire. It also helps with fluid retention, swelling, vascular problems and relieves digestive problems, bloating and body aches. It's taken from Anjum Ananad's 'Eat Right for Your Body Type.' The Ginger Lime and Honey (GLH) recipe is excellent for any Kapha dominant respiratory conditions: sinusitis, congestion, coughs, colds, Covid, Long Covid and is also very good for nausea and weight loss. I am eating the soup two to three times a day for a few days, and having the GLH drink after each meal. They are my go to in times like these - and also quite delicious!! Adding these recipes to your weekly meal planner to give your digestive system a break once a week, is also a great idea. Enjoy and please comment if you try it to let others know.
Ginger Lime and Honey Home Remedy
Cut and peel 100g fresh ginger and blend with half a cup of water. Squeeze out the ginger juice through a fine sieve, then mix with 100ml water, juice of 6 limes, 3tsp of jaggery or unrefined sugar and 6tsps or honey. Store in an airtight container in the fridge for up to 2wks. Mix 2-3tbsps with hot water and take as a small drink after meals up to 3x per day, add 1/2 tsp of pepper with each dose, if you have a lot of phlegm or chesty cough.
Detoxifying Green Mung Bean Soup (2-3 bowls)
Wash 100g mung beans and soak overnight (or at least 4hrs). Boil the lentils with 1l fresh water, then gently simmer, adding 1/2 tsp turmeric. Simmer gently until soft (30-40mins) adding more water if required. Once cooked, heat 1-2tsp ghee in a small saucepan, add 1/4 tsp of asafoetida and sizzle for 5secs. Add 1tsp of cumin seeds, 1tsp of chopped fresh ginger and cook for 30secs. Add 1tsp ground coriander, 1/4 tsp garam masala and simmer for around 20secs before mixing into the beans. Cook for 2mins then add rock salt to taste and serve with warm coriander leaves (and a good squeeze of lemon juice - optional). Add in steamed or sautéed bitter green leafy veg too. I can guarantee this will burn lots of toxins and is also great for weight loss. Please comment if you try it, great for other to see if it works for you.
